The way I like to start a dc row is by doing a dc decrease. After you ch 3, do a decrease in the next two stitches. Keeps the stitch count correct and keeps spacing needed!

And then how do I end it without having a drastic change? ex. My first hat end up with an uneven finish when my FPDC/BPDC was done and I fastened off.

I do two chains and pull them tight. Then I do a dc in the first stitch.

I prefer a stacked sc in place of a ch3 to start either a hdc or dc row. You don’t have the gap and you have the top of a regular stitch on your return row instead of a chain. It makes a nice even row end
